  • ¾ cup (165g) brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups (270g) white chocolate chips
  • 1 cup (about 150g) candy corn, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened unsalted butter with granulated sugar and brown sugar using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
  4. Beat in the eggs one at a time, then add vanilla extract, scraping down the sides as needed.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding gently with a spatula until just combined.
  6. Gently fold in the white chocolate chips and roughly chopped candy corn.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes until cookies are golden at the edges but still soft in the center.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
