  • 200 g (1 cup) granulated sugar
  • 240 ml (1 cup) water
  • 3 whole cinnamon sticks
  • 2 tablespoons coarse sea salt
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon
  • Apple slices, for garnish
  • Cinnamon sticks, for garnish (optional)
  • Fresh rosemary sprigs, for garnish (optional)

Instructions

  1. Make the cinnamon simple syrup: Combine 200 g (1 cup) sugar, 240 ml (1 cup) water, and 3 cinnamon sticks in a small saucepan. Bring to a gentle boil over medium heat, stirring until sugar dissolves (about 3-4 minutes). Reduce heat to low and simmer for 10 minutes. Remove from heat, cool completely, then strain out cinnamon sticks. Store in a sealed jar in the refrigerator for up to two weeks.
  2. Prepare the salt rim: In a small shallow dish, mix 2 tablespoons coarse sea salt, 1 tablespoon granulated sugar, and ½ teaspoon ground cinnamon. Run a lime wedge around the rim of two rocks glasses, then dip the rims into the salt mixture to coat evenly. Tap off excess.
  3. Juice the limes: Roll limes on the countertop to release juices. Cut in half and juice until you have 60 ml (2 oz) fresh juice. Strain through a fine-mesh strainer to remove seeds and pulp.
  4. Combine and shake: Fill a cocktail shaker with ice. Add 120 ml (4 oz) apple cider, 90 ml (3 oz) blanco tequila, 60 ml (2 oz) fresh lime juice, 30 ml (1 oz) orange liqueur, and 30 ml (1 oz) cinnamon simple syrup. Secure lid and shake vigorously for 15-20 seconds until the shaker feels frosty.
  5. Strain and serve: Fill prepared glasses with fresh ice. Strain the margarita mixture evenly into the glasses. Garnish each with a thin apple slice, a cinnamon stick (optional), and a rosemary sprig (optional).
  6. Taste and adjust: If too sweet, add more lime juice. If too tart, add more syrup. If too strong, top with a splash of club soda.

Notes

Chill glasses in the freezer for 10 minutes before serving. Use large ice cubes to slow dilution. For parties, multiply the recipe and mix the base (without ice) in a pitcher up to 24 hours ahead. The cinnamon simple syrup can be made in advance and keeps for two weeks in the fridge.
