  • 1 medium yellow onion, diced (about 1 cup)
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried sage (optional)
  • 1/2 teaspoon black pepper, plus more to taste
  • 1 teaspoon salt, plus more to taste
  • 6 cups low-sodium chicken broth
  • 1 cup wild rice blend
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes until the onions are translucent and the carrots start to soften.
  2. Add the minced garlic, thyme, rosemary, sage, salt, and pepper. Stir constantly for 30-60 seconds until fragrant.
  3. Sprinkle in the flour and stir to coat the vegetables. Cook for 1-2 minutes, stirring constantly.
  4. Slowly pour in the chicken broth while stirring, scraping up any browned bits from the bottom of the pot. Bring to a gentle boil, then reduce heat to a simmer.
  5. Stir in the wild rice blend. Nestle the chicken into the liquid. Cover and simmer gently for 40-45 minutes, until the rice is tender but still has a slight chew.
  6. Remove the chicken from the pot and let rest for a couple of minutes. Shred with two forks or chop into bite-sized pieces.
  7. Return the shredded chicken to the pot. Stir in the heavy cream. Simmer uncovered for 5 minutes until slightly thickened. Adjust salt and pepper to taste.
  8. Ladle into bowls and garnish with fresh chopped parsley.

Notes

For best texture, use a wild rice blend (not pure wild rice). Chicken thighs stay juicier than breasts. The soup thickens as it sits; add extra broth when reheating. For freezing, undercook the rice slightly or freeze the base without rice and add freshly cooked rice when reheating.
