  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup milk (dairy or plant-based)
  • 1 tablespoon white vinegar or lemon juice
  • 1/2 cup buffalo hot sauce (like Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted
  • Optional for serving: ranch dressing, blue cheese dressing, celery sticks, carrot sticks

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Cut the cauliflower into bite-sized florets about 1 to 1.5 inches wide. Pat them dry with a clean kitchen towel.
  3. In a small bowl, combine the milk and white vinegar (or lemon juice). Stir and let it sit for 5 minutes to create a quick buttermilk.
  4. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper.
  5. Pour the milk-vinegar mixture into the flour mixture. Whisk until you have a smooth, thick batter (similar to pancake batter).
  6. Add the dried cauliflower florets to the bowl with the batter. Toss until every floret is evenly coated.
  7. Place the battered florets on the prepared baking sheet in a single layer, making sure they aren’t touching.
  8. Bake for 20 minutes. Remove from the oven, flip each floret over, and bake for another 5-10 minutes until golden and crispy.
  9. While the cauliflower bakes, combine the buffalo hot sauce and melted butter in a small saucepan over low heat. Stir until warm and fully incorporated.
  10. Transfer the hot cauliflower florets to a large bowl. Pour the buffalo sauce over them and toss gently with tongs until every piece is coated.
  11. Serve immediately with ranch or blue cheese dressing, and celery and carrot sticks on the side.

Notes

For the best texture, dry the cauliflower thoroughly before battering. The cornstarch is key for crispiness. Serve immediately as crispiness fades quickly. For an air fryer version, cook at 375°F (190°C) for 12-15 minutes, shaking halfway through.
