These crispy smoky bacon-wrapped jalapeño poppers are the perfect snack for game day, movie night, or a late-night craving. With a creamy cheese filling, smoky bacon, and a gentle kick from the jalapeño, they’re easy to make and impossible to resist.

  • 12 large jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 12 slices thin-cut bacon
  • 1/4 cup chopped green onions (optional)
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup cooked crumbled sausage (optional)
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top if available.
  2. Slice each jalapeño in half lengthwise. Use a small spoon to scrape out the seeds and white membranes. Set aside.
  3. In a medium mixing bowl, combine softened cream cheese, shredded cheddar, smoked paprika, garlic powder, onion powder, black pepper, and salt. Mix until smooth. Stir in optional add-ins if using.
  4. Fill each jalapeño half with the cream cheese mixture, level with the top of the pepper.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around the middle of each stuffed jalapeño half, overlapping slightly on the bottom. Secure with a toothpick if needed.
  6. Place the wrapped poppers on the wire rack (or directly on the foil-lined sheet) with the bacon seam side down. Leave space between each popper.
  7. Bake for 20-25 minutes, until bacon is browned and crispy and filling is bubbly. Check at 20 minutes and add 3-5 minutes if needed.
  8. Remove from oven and let cool on the baking sheet for about 5 minutes.
  9. Garnish with cilantro or green onions if desired. Serve warm.

Notes

For extra crispy bacon, par-cook the bacon slices in the microwave for 30 seconds before wrapping. If you don’t have a wire rack, flip the poppers halfway through baking. To make ahead, assemble up to 24 hours in advance and refrigerate; add 5 minutes to baking time. For a milder version, remove all seeds and membranes or use mini sweet peppers.
