A light and cozy cinnamon apple cider sangria that balances warmth with brightness, perfect for cozy evenings at home. This easy recipe comes together in under 15 minutes of active prep and is a crowd-pleaser for fall parties or quiet nights.

  • 1 cup granulated sugar (or coconut sugar)
  • 3 cinnamon sticks (preferably Saigon cinnamon)
  • 1 teaspoon pure vanilla extract
  • 1 bottle (750 ml) dry white wine, such as Sauvignon Blanc or Pinot Grigio (chilled)
  • 2 cups unsweetened apple cider
  • 1/2 cup brandy or bourbon (optional)
  • 1 large Honeycrisp apple, thinly sliced
  • 1 large Bosc pear, thinly sliced
  • 1/2 cup fresh cranberries (or frozen)
  • 1 orange, thinly sliced into rounds
  • 2–3 cinnamon sticks for garnish
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Make the cinnamon simple syrup: In a small saucepan, combine 1 cup water, 1 cup sugar, and 3 cinnamon sticks. Bring to a gentle boil over medium heat, stirring occasionally until the sugar dissolves completely. Reduce heat and simmer for 8-10 minutes. Remove from heat, stir in vanilla extract, and let cool completely. Strain out cinnamon sticks and store syrup in a jar in the fridge.
  2. Prep the fruit: Wash and slice the apple and pear into thin rounds or half-moons (about 1/4 inch thick). Slice the orange into thin rounds, then cut each round in half. Rinse cranberries if using fresh.
  3. Layer the fruit in a large pitcher: Start with a layer of apple and pear slices, then add a few orange rounds and a handful of cranberries.
  4. Add the liquids: Pour the chilled white wine over the fruit, followed by the apple cider. Add brandy or bourbon if using. Add 1/4 cup of cinnamon simple syrup to start.
  5. Gently muddle: Using a wooden spoon or muddler, gently press down on the fruit a few times to release juices.
  6. Stir and taste: Give everything a gentle stir. Taste and add more cinnamon syrup if desired (1 tablespoon at a time).
  7. Chill: Cover the pitcher and refrigerate for at least 2 hours, ideally 4-6 hours or overnight.
  8. Serve: Fill glasses with ice, pour sangria over the top, and include some of the fruit in each glass. Garnish with a fresh cinnamon stick and a sprig of rosemary if desired.

Notes

For best results, use a dry white wine and unsweetened apple cider. The sangria improves after 4-6 hours of chilling. For a non-alcoholic version, replace wine with sparkling apple cider or club soda and skip the brandy. Leftover sangria keeps in the fridge for 2-3 days; remove fruit after 24 hours to prevent mushiness.
