Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. In a large mixing bowl, mash the ripe banana with a fork until mostly smooth (a few lumps are fine).
  3. Add the pumpkin puree, maple syrup, melted coconut oil, egg, and vanilla extract to the mashed banana. Whisk until smooth and well combined.
  4. Sprinkle the rolled oats, cinnamon, nutmeg, ginger, salt, and baking powder over the wet mixture. Stir with a spatula until evenly combined. If using optional add-ins (chocolate chips, nuts, cranberries), fold them in now.
  5. Transfer the mixture to the prepared baking pan. Use the back of a spatula or lightly wet hands to press the batter evenly into the pan, ensuring a flat surface.
