  • 2 ¼ teaspoons active dry yeast (one standard packet)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour (plus extra for dusting)
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon salt
  • 10 cups water (for the baking soda bath)
  • ⅔ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse pretzel salt or flaky sea salt for sprinkling
  • 2 tablespoons unsalted butter (for beer cheese dip)
  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • 1 cup whole milk (2% works too)
  • ½ cup beer (light lager or pilsner)
  • 2 cups shredded sharp cheddar cheese (shredded from a block)
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder (optional)
  • Salt and black pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 5 minutes until foamy.
  2. Make the dough: Add melted butter, 1 teaspoon salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 2 cups of flour, one cup at a time, until dough pulls away from the sides. If too sticky, add flour a tablespoon at a time.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. It should spring back when poked.
  4. First rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for about 1 hour until doubled in size.
  5. Shape the bites: Punch down dough and turn onto a floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch bite-sized pieces. You should get about 40-50 bites.
  6. Prepare the baking soda bath: Preheat oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil. Carefully add baking soda and stir until dissolved.
  7. Boil the pretzel bites: Working in batches, drop 8-10 bites into the boiling water. Boil for 20-30 seconds, then transfer to a parchment-lined baking sheet using a slotted spoon. Space about 1 inch apart.
  8. Egg wash and salt: Brush each bite with beaten egg wash, then sprinkle generously with coarse pretzel salt.
  9. Bake: Bake for 12-15 minutes until deep golden brown, rotating the sheet halfway through. Let cool on the baking sheet for 5 minutes.
  10. Make the beer cheese dip: While pretzels bake, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute. Slowly pour in milk and beer, whisking constantly. Cook for 2-3 minutes until thickened. Reduce heat to low, add shredded cheddar, garlic powder, and mustard powder. Stir until melted and smooth. Season with salt and pepper. Keep warm.

Don’t skip the baking soda bath—it gives pretzels their signature chew and deep brown crust. Boil for exactly 20-30 seconds to avoid a metallic taste. Shred your own cheese for the dip to ensure a smooth, creamy texture. Keep unused dough covered while shaping to prevent drying out.
