  • 1/2 cup (125g) natural peanut butter
  • 1/3 cup (113g) honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground flaxseed (optional)
  • 1/2 cup (90g) mini chocolate chips
  • Pinch of sea salt
  • Optional: chopped nuts (walnuts, pecans)
  • Optional: dried cranberries or raisins
  • Optional: shredded coconut

Instructions

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy lifting.
  2. In a large bowl, combine rolled oats and ground flaxseed (if using). Stir to distribute evenly.
  3. In a microwave-safe bowl, gently warm peanut butter and honey for 30 seconds to 1 minute until smooth and pourable. Stir in vanilla extract and sea salt. Avoid overheating.
  4. Pour the peanut butter and honey mixture over the oats and flaxseed. Mix thoroughly with a wooden spoon or silicone spatula until all oats are coated and sticky.
  5. Transfer the mixture into the prepared pan and press firmly and evenly to create a compact layer about 1 inch thick.
  6. Melt the mini chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between each until smooth, or use a double boiler.
  7. Drizzle the melted chocolate evenly over the pressed granola mixture using a fork or spoon.
  8. Place the pan in the refrigerator for at least 1 hour until the bars are firm and the chocolate drizzle has hardened.
  9. Use the parchment overhang to lift the block out of the pan. Slice into 8 to 10 bars depending on preferred size. Store leftovers in an airtight container in the fridge.

Notes

Use natural peanut butter for better binding. Avoid overheating the honey and peanut butter mixture to prevent hard bars. Press the mixture firmly into the pan to avoid crumbly bars.
