Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray, then line it with parchment paper, leaving an overhang on the long sides.
  2. Prepare the zucchini: Wash and trim the ends, then grate using the large holes of a box grater to get about 1 ½ cups. Place the grated zucchini in a clean kitchen towel, gather the corners, and squeeze firmly over the sink to remove excess liquid. Set aside.
