Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish lightly with butter or non-stick spray.
  2. Peel, core, and slice 6 medium apples into 1/4-inch thick pieces. Toss the slices in a large bowl with 1 tablespoon lemon juice, 1/4 cup granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Let sit for 5 minutes.
  3. In a medium bowl, combine 1 cup old-fashioned rolled oats, 1/2 cup all-purpose flour, 1/2 cup packed brown sugar, 1/4 teaspoon salt, and 1 teaspoon vanilla extract. Add the cold, cubed butter and use a pastry cutter or your fingertips to work it into the dry ingredients until crumbly with pea-sized butter pieces.
  4. Spread the apple mixture evenly in the prepared baking dish. Drizzle 1/2 cup salted caramel sauce over the top. Sprinkle the oat topping evenly over the apples and caramel, pressing down gently.
  5. Bake for 35 to 40 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  6. Let the crisp rest on a wire rack for at least 10 minutes. Just before serving, drizzle extra salted caramel sauce over the top. Serve warm.
