Cozy Baked Pumpkin Donuts with Maple Glaze

These tender, cakey baked pumpkin donuts are topped with a sweet maple glaze and come together in about 30 minutes. Perfect for fall mornings or cozy afternoons, they’re a crowd-pleasing treat that’s baked, not fried.

  • 1 ¾ cups all-purpose flour (220 grams)
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup pumpkin puree (240 grams)
  • ½ cup packed brown sugar (100 grams)
  • ¼ cup granulated sugar (50 grams)
  • 2 large eggs, room temperature
  • ½ cup vegetable oil (120 ml)
  • ¼ cup milk (60 ml)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (120 grams), sifted
  • 3 tablespoons pure maple syrup
  • 1–2 tablespoons milk
  • ¼ teaspoon maple extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 6-cavity donut pan well with butter or non-stick spray.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a separate bowl, whisk together pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are okay). Do not overmix.
  5. Transfer batter to a piping bag or sturdy Ziploc bag with the corner snipped off. Pipe batter into the prepared donut pan, filling each cavity about ⅔ full.
  6. Bake for 10-12 minutes, or until a toothpick inserted into the thickest part comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. While donuts cool, make the glaze: In a small bowl, whisk together sifted powdered sugar, maple syrup, and 1 tablespoon of milk. Add more milk if needed for a drizzling consistency. Stir in maple extract if using.
  8. Once donuts are completely cool, dip the top of each donut into the glaze, letting excess drip off. Place back on the wire rack, glazed side up, and let set for 10-15 minutes.

Notes

Don’t overmix the batter; a few lumps are fine. Use room temperature ingredients for best texture. Let donuts cool completely before glazing to prevent the glaze from running off. For a gluten-free version, use a 1:1 gluten-free baking blend. For dairy-free, use oat milk in the batter and a plant-based milk in the glaze.
