Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with butter or non-stick spray.
  2. In a medium bowl, combine the sliced peaches, brown sugar, cornstarch, cinnamon, nutmeg (if using), lemon juice, and salt. Toss gently until evenly coated. Let sit while preparing the biscuit topping.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add cold, cubed butter and cut into the flour mixture using a pastry cutter or two forks until it resembles coarse crumbs with pea-sized pieces.
  4. Mix cold buttermilk and vanilla extract (if using) together, then pour into the flour mixture. Stir gently just until combined; dough should be slightly sticky and shaggy.
  5. Pour the peach filling evenly into the prepared baking dish. Drop spoonfuls of biscuit topping over the peaches, covering as much surface as possible but leaving some gaps for steam.
