  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 bay leaf

  • 3 cups shredded rotisserie chicken (from one medium bird)
  • 8 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prep your ingredients first. Dice the onion, slice the carrots into half-moons, slice the celery, and mince the garlic. Shred the rotisserie chicken using two forks—remove the skin and bones, then pull the meat into bite-sized pieces.
  2. Melt the butter in your Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften and the onions turn translucent.
  3. Add the minced garlic and cook for 30 seconds, just until fragrant. Don’t let it brown—burnt garlic turns bitter. Stir constantly during this step.
  4. Pour in the chicken broth and add the dried thyme, rosemary, and bay leaf. Bring everything to a boil, then reduce the heat to a gentle simmer. Let it bubble away for 10 minutes.
  5. While the broth simmers, cook the noodles. Bring a separate pot of salted water to a boil and cook the egg noodles according to package directions. Drain them and toss with a tiny bit of olive oil to prevent sticking. Do not cook the noodles in the soup broth.
  6. Add the shredded chicken to the simmering broth. Let it heat through for 2-3 minutes.
  7. Season carefully. Taste the broth and add salt and pepper as needed. Start with ½ teaspoon of salt and ¼ teaspoon of pepper, then adjust.
  8. Finish with lemon juice and parsley. Remove the bay leaf, stir in the fresh lemon juice and chopped parsley. Turn off the heat.
  9. Serve immediately. Place a portion of cooked noodles in each bowl, then ladle the soup over the top. Garnish with extra parsley and a crack of black pepper.

Notes

Cook noodles separately to prevent them from absorbing broth and becoming mushy. The double-thyme trick: add dried thyme at the beginning and a pinch of fresh thyme at the end for depth and brightness. Undercook noodles by 1 minute from package directions for best texture. Store broth and chicken mixture separately from noodles. Soup base keeps in refrigerator for up to 4 days; noodles stored separately last 2-3 days. Freeze broth and chicken mixture for up to 3 months (without noodles).
