Instructions

  1. In a large skillet over medium heat, melt the butter. Add the diced onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Sprinkle the flour over the cooked onions and garlic. Stir constantly with a whisk for 1-2 minutes until the mixture is bubbly and golden.
  3. Slowly pour in about 1 cup of the broth while whisking continuously. The mixture will seize up and look lumpy at first—keep whisking until smooth. Add the remaining 3 cups of broth and whisk until fully combined. Let simmer for 1-2 minutes until slightly thickened.
  4. Pour the entire onion-broth mixture into a 6-quart or larger slow cooker. Add the milk and broccoli florets. Stir gently.
  5. Cover and cook on LOW for 3-4 hours or on HIGH for 1.5-2 hours, until the broccoli is tender.
  6. For a smoother texture, use an immersion blender to blend about half of the soup directly in the slow cooker. Alternatively, carefully transfer 2 cups of soup to a blender, blend until smooth, and stir back in.
  7. Turn the slow cooker to WARM or LOW. Gradually add the shredded cheddar cheese, a handful at a time, stirring gently after each addition until fully melted. Stir in the Dijon mustard.
  8. Taste and season with salt and black pepper as needed. Ladle into bowls and garnish as desired. Serve immediately.
