Cozy Iced Pumpkin Chai Latte with Oat Milk (7-Minute Easy)

A quick and easy iced pumpkin chai latte made with real pumpkin puree, oat milk, and warm spices. Ready in just 7 minutes, this cozy fall drink is dairy-free, customizable, and tastes better than any coffee shop version.

  • 1 cup unsweetened oat milk (preferably barista edition)
  • 1/2 cup chai concentrate (store-bought or homemade)
  • 1 to 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • Ice cubes (large cubes preferred)
  • Optional: cinnamon stick, star anise, or nutmeg for garnish

Instructions

  1. In a small bowl or liquid measuring cup, combine 2 tablespoons pumpkin puree, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon ground cinnamon, and 1 tablespoon maple syrup. Mash and stir until completely smooth.
  2. Warm 1 cup oat milk in the microwave for 20 seconds or on the stovetop over medium-low heat for 30 seconds, just until the chill is off.
  3. Pour the warm oat milk into the pumpkin mixture and whisk vigorously until fully combined and smooth.
  4. Add 1/2 cup chai concentrate and 1/2 teaspoon vanilla extract. Stir gently to combine. Taste and adjust sweetness or spice as desired.
  5. Transfer the mixture to a mason jar or cocktail shaker. Add a generous handful of ice cubes (about 6 to 8 large cubes). Screw on the lid and shake vigorously for about 15 seconds until well-chilled and slightly frothy.
  6. Fill a tall 16-ounce glass with fresh ice cubes.
  7. Pour the shaken latte over the fresh ice. Sprinkle a pinch of pumpkin pie spice or cinnamon on top. Garnish with a cinnamon stick or star anise if desired. Serve immediately with a straw.

Notes

Warming the oat milk before mixing prevents pumpkin clumps. For best texture, use barista edition oat milk. The pumpkin-oat milk base can be made up to 3 days in advance and stored in the fridge. Add chai concentrate fresh before serving. If the drink sits for more than 5 minutes, stir with a straw before sipping as pumpkin puree may settle.
