  • 4 large soft pretzels
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon flaky sea salt or pretzel salt
  • ½ cup whole-grain mustard
  • ¼ cup spicy brown mustard
  • 4 links bratwurst or weisswurst, cooked and sliced
  • 8 ounces sharp cheddar, sliced
  • 4 ounces brie or camembert
  • 1 cup cornichons or small dill pickles
  • 1 small red onion, thinly sliced
  • 1 crisp apple (Granny Smith or Honeycrisp), sliced
  • ½ cup roasted almonds or pecans
  • 1 cup red or green grapes
  • 1 small baguette, sliced and lightly toasted, or sturdy crackers

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Place pretzels on the baking sheet. Brush with 2 tablespoons melted butter and sprinkle with ½ teaspoon coarse salt. Bake for 8-10 minutes until warm and slightly crisped.
  3. While pretzels warm, slice bratwurst into ½-inch rounds. Cook in a skillet over medium heat for 3-4 minutes per side until browned and heated through. Transfer to a plate.
  4. Melt remaining 2 tablespoons butter in a small saucepan or microwave. Set aside in a small bowl.
  5. Arrange small bowls on a large board or platter: one for whole-grain mustard, one for spicy brown mustard, one for melted butter, and one for cornichons.
  6. Slice sharp cheddar into thin triangles or rectangles. Place brie wheel whole or halved on the board. Fan cheddar slices nearby.
  7. Pile warm sausage slices near one mustard bowl. Add red onion, apple slices, grapes, and nuts in separate clusters around the board.
  8. Once pretzels are done, arrange them on the board in a row or fan shape. Sprinkle remaining ½ teaspoon coarse salt over the top while warm.
  9. Tuck toasted baguette slices or crackers into remaining gaps. Serve immediately.

Notes

Don’t overbake the pretzels—8 minutes is usually perfect. Warm sausages gently over medium heat. Let cheese come to room temperature for best flavor. Assemble board just before serving; prep components ahead if needed. For a gluten-free option, use gluten-free pretzels and crackers. For dairy-free, skip cheese and butter (use olive oil for dipping).
