Cozy One-Pot Lasagna Soup with Creamy Ricotta Dollops

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef (85/15)
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 8 ounces dried lasagna noodles, broken into 2-inch pieces
  • 1 cup whole milk ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley or basil, chopped

Instructions

  1. Heat the olive oil in a Dutch oven over medium heat. Add the diced onion and cook, stirring occasionally, for 5 to 7 minutes until soft and translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the ground beef. Break it apart and let it brown undisturbed for 3 minutes, then stir and cook until fully browned, about 5 to 6 minutes total. Do not drain the fat.
  4. Stir in the tomato paste and cook for 2 minutes, stirring constantly, until darkened and caramelized.
  5. Pour in the crushed tomatoes, chicken broth, and water. Add dried oregano, dried basil, red pepper flakes, salt, and pepper. Stir, scraping the bottom of the pot to release browned bits.
  6. Bring the soup to a boil, then reduce heat to a steady simmer. Let it bubble gently for 10 minutes.
  7. Add the broken lasagna noodles, stirring to submerge. Simmer for 10 to 12 minutes, stirring occasionally, until noodles are tender but al dente.
  8. While the pasta cooks, make the ricotta topping: In a small bowl, combine ricotta, half of the grated Parmesan, and a pinch of salt and pepper. Stir gently.
  9. Remove the pot from heat. Taste and adjust seasoning.
  10. Ladle soup into bowls. Top each with a dollop of ricotta mixture, shredded mozzarella, remaining Parmesan, and fresh herbs. Serve immediately.

Notes

For leftovers, cook pasta separately and add to individual bowls before ladling hot broth over it to prevent mushiness. Brown the meat properly and toast the tomato paste for best flavor. Season in layers. Do not boil the dairy; let the ricotta and mozzarella melt on top from the soup’s heat.
