  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups (960 ml) low-sodium beef broth
  • 1 can (14.5 oz / 411g) diced tomatoes (fire-roasted preferred)
  • 1 can (8 oz / 227g) tomato sauce
  • 1 cup (150g) frozen corn
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 2 tablespoons taco seasoning
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, lime wedges

Instructions

  1. Brown the beef (5-7 minutes): Place a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned all over. Drain all but about 1 tablespoon of fat.
  2. Sauté the aromatics (3-4 minutes): Add the diced onion to the pot with the beef. Cook, stirring occasionally, until the onion softens and turns translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the seasoning (1 minute): Sprinkle the taco seasoning over the beef and onion mixture. Stir well to coat evenly.
  4. Pour in the liquids and tomatoes (2 minutes): Add the beef broth, diced tomatoes (with their juices), and tomato sauce. Stir everything together, scraping the bottom of the pot to release any browned bits.
  5. Add the beans and corn (1 minute): Stir in the drained black beans and frozen corn.
  6. Bring to a boil, then simmer (15-20 minutes): Increase the heat to high and bring the soup to a gentle boil. Then reduce the heat to low, cover the pot, and let it simmer. Stir occasionally.
  7. Taste and adjust (1 minute): After simmering, taste the soup. Add salt and pepper if needed.
  8. Serve and garnish (2 minutes): Ladle the soup into bowls. Top with shredded cheddar, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, and a squeeze of lime.

Don’t skip the simmer; that 15-20 minutes is where the magic happens. The soup tastes good right away, but after it simmers, it tastes like it’s been cooking all day. This soup actually tastes better the next day as the flavors meld.
