Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a standard 12-cup muffin tin with butter or non-stick spray.
  2. Dice the peaches into ½-inch pieces. If using frozen peaches, measure them frozen and do not thaw.
  3. In a large bowl, mix together the rolled oats, brown sugar, cinnamon, baking powder, and salt. Break up any clumps of brown sugar with your fingers.
  4. In a separate medium bowl, whisk the egg until frothy. Add the milk, melted butter, maple syrup, and vanilla extract. Whisk until well combined and slightly creamy.
  5. Pour the wet ingredients into the dry ingredients. Stir gently with a rubber spatula until just combined (a few streaks of dry oats are okay). Fold in the diced peaches gently.
  6. Let the mixture rest for 5 minutes to allow the oats to absorb some liquid.
  7. In a small bowl, prepare the topping: stir together 2 tablespoons brown sugar and ½ teaspoon cinnamon. Add 1 tablespoon melted butter and stir until crumbly.
  8. Divide the oatmeal mixture evenly among the 12 muffin cups, filling each about ¾ full.
  9. Sprinkle the topping evenly over each oatmeal cup.
  10. Bake on the middle rack for 18-22 minutes, until the tops are golden brown and the edges look set. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.
  11. Cool in the pan for exactly 5 minutes. Then run a butter knife around the edges and transfer to a wire rack.
  12. Serve warm or at room temperature.
