  • 3 large sweet potatoes (about 2 pounds/900g), peeled and cubed into 1-inch pieces
  • 1/4 cup (60ml) unsalted butter, melted
  • 1/4 cup (50g) packed light brown sugar
  • 1/4 cup (60ml) whole milk or heavy cream
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup (100g) pecan halves or pieces
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1/4 cup (60ml) unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Place the peeled and cubed sweet potatoes in a large pot and cover with cold water by about 1 inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for 12-15 minutes, until fork-tender. Drain well and let steam dry for a minute.
  2. Return the drained sweet potatoes to the pot (or transfer to a large mixing bowl). Add melted butter, brown sugar, milk or cream, beaten egg, vanilla extract, cinnamon, nutmeg, and salt. Mash until smooth but still slightly textured. Preheat oven to 375°F (190°C).
  3. In a medium bowl, combine pecan halves, flour, brown sugar, cinnamon, and salt. Add cold cubed butter. Use a pastry cutter, two forks, or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  4. Transfer the sweet potato mixture to a greased 8×8-inch or 9×9-inch baking dish and spread into an even layer. Sprinkle the pecan streusel evenly over the top.
  5. Bake for 25-30 minutes, until the streusel is golden brown and the filling is bubbly around the edges. If the streusel browns too quickly, tent loosely with foil for the last 10 minutes. Let cool for 5-10 minutes before serving.

Notes

For best results, use room-temperature egg and cold butter for the streusel. Toast pecans beforehand for extra nuttiness. The casserole can be assembled up to 24 hours in advance and refrigerated. Leftovers keep in the fridge for up to 4 days; reheat in the oven or microwave.
