Creamy Buffalo Chicken Dip in a Bread Bowl: Easy Game Day Appetizer

  • 8 ounces cream cheese, softened to room temperature
  • 2 cups cooked shredded chicken (rotisserie chicken works well)
  • ½ cup Buffalo wing sauce (Frank’s RedHot Original recommended)
  • ½ cup ranch dressing (blue cheese dressing works too)
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • 2 green onions, thinly sliced
  • 1 large round loaf of bread (sourdough, Italian, or French, about 89 inches in diameter)
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the bread bowl: Using a serrated knife, cut a circle about 2 inches from the edge of the top of the bread loaf. Slice downward at an angle to remove the top ‘lid’. Set the lid aside. Gently pull out the soft bread from the inside, leaving a ½-inch thick wall. Save the bread pieces for dipping.
  3. Brush the inside of the bread bowl: In a small bowl, mix melted butter with garlic powder (if using). Brush the inside of the bread bowl and the underside of the lid with the butter mixture. Place the bread bowl and lid on a baking sheet.
  4. Make the dip base: In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and fluffy, about 1-2 minutes. Scrape down the sides.
  5. Add the wet ingredients: Add Buffalo wing sauce and ranch dressing to the cream cheese. Mix on low speed until combined and smooth.
  6. Add the chicken and cheese: Fold in the shredded chicken, ½ cup cheddar cheese, and ½ cup mozzarella cheese. Mix until evenly distributed.
  7. Fill the bread bowl: Spoon the dip mixture into the hollowed-out bread bowl. Spread evenly. Top with remaining ½ cup cheddar and ½ cup mozzarella cheese.
  8. Bake: Place the filled bread bowl on the baking sheet (put the bread lid on the sheet next to it). Bake for 20-25 minutes, until hot and bubbly and the cheese is melted and golden brown. If the top browns too quickly, tent loosely with aluminum foil.
  9. Broil (optional): For an extra-golden top, switch to broil for the last 1-2 minutes. Watch carefully.
  10. Garnish and serve: Remove from oven. Sprinkle sliced green onions over the top. Place the bread lid on the side for dipping. Serve immediately.

Notes

Softened cream cheese is essential for a smooth dip. For extra insurance against sogginess, toast the bread bowl at 350°F for 5 minutes before filling. The dip mixture can be prepared up to 24 hours in advance and stored in the fridge; add 5-10 minutes to baking time if starting from cold.
