  • 1 ½ cups red seedless grapes, halved

  • 3 to 4 green onions, sliced
  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and pull meat off bones into bite-sized pieces (about ½ inch). If using cooked chicken breasts, dice similarly. Place in a large mixing bowl.
  2. Toast the pecans: Place chopped pecans in a dry skillet over medium heat. Stir frequently for 3-4 minutes until fragrant and slightly darkened. Transfer to a plate to cool.
  3. Halve the grapes: Place a handful of grapes on a cutting board, flatten with your hand, and slice through all at once with a single knife stroke for efficiency. Aim for uniform halves.
  4. Dice the celery and slice the green onions: Cut celery lengthwise into thin strips, then crosswise into small dice. Slice white and light green parts of green onions; discard dark green tops.
  5. Make the dressing: In a small bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Taste and adjust seasoning if needed.
  6. Combine everything: Pour dressing over chicken. Add halved grapes, diced celery, sliced green onions, and cooled pecans. Fold gently with a rubber spatula until evenly coated.
  7. Let it rest: Cover bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld. The salad is even better the next day.
  8. Final taste and adjust: After resting, taste and add more salt or honey if needed. Cold food requires more seasoning.
