  • 1 medium ripe banana
  • 1–2 tablespoons maple syrup or honey

  • Pinch of salt
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon ground flaxseed (optional)
  • 1/2 teaspoon cinnamon (optional)
  • Sliced banana (for topping)
  • Drizzle of peanut butter (for topping)
  • Chopped peanuts or walnuts (for topping)
  • A sprinkle of cinnamon or cocoa nibs (for topping)

Instructions

  1. Mash the banana thoroughly in a small bowl until mostly smooth with a few tiny lumps.
  2. In a separate small bowl or measuring cup, whisk together the milk and peanut butter until fully incorporated.
  3. Add the rolled oats to a mason jar or airtight container. Pour in the milk-peanut butter mixture. Add the mashed banana, maple syrup or honey, vanilla extract, and a pinch of salt. If using chia seeds, flaxseed, or cinnamon, add them now.
  4. Stir everything together until well combined, scraping the bottom of the jar to ensure no dry oats remain.
  5. Seal the jar and refrigerate for at least 6 hours, ideally 8-12 hours (overnight).
  6. When ready to eat, take the jar out of the fridge and stir well. If too thick, add a splash of milk to loosen.
  7. Add desired toppings (sliced banana, peanut butter drizzle, chopped nuts, cinnamon or cocoa nibs). Serve cold or microwave for 45-60 seconds if preferred warm.

Notes

For the creamiest texture, use rolled oats (not instant or steel-cut). Mash the banana before adding to ensure even distribution. Whisk peanut butter into milk first for uniform flavor. Oats keep in the fridge for up to 4 days. Flavors deepen over time.
