  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana

Instructions

  1. Mash half the banana in a jar or small bowl until smooth with a few small lumps.
  2. Add milk, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt to the mashed banana. Stir or whisk until the peanut butter is fully incorporated and the mixture is smooth and slightly thick.
  3. Pour in rolled oats and chia seeds. Stir well until everything is evenly combined and the oats are fully submerged.
  4. Slice the remaining half of the banana and arrange on top. Drizzle or dollop the remaining peanut butter over the top. Add optional toppings like chocolate chips or cinnamon if desired. Swirl gently for a marbled effect.
  5. Cover the jar or bowl tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or let sit at room temperature for 10 minutes. Add extra peanut butter drizzle if desired.

For best texture, use rolled oats (not instant or steel-cut). Mash half the banana into the oat mixture for creaminess. Chia seeds are optional but help create a pudding-like consistency.
