A quick and easy autumn-inspired latte featuring creamy oat milk cold foam and a lightly spiced pumpkin blend, perfect for a refreshing seasonal treat without heating the kitchen.

  • 1 shot (30 ml) freshly brewed espresso or strong coffee
  • 2 tablespoons (30 g) pumpkin puree (100% pumpkin, not pumpkin pie filling)
  • 1 tablespoon (15 ml) maple syrup (or honey/agave as substitute)
  • ½ teaspoon (2.5 ml) vanilla extract
  • ¼ teaspoon (0.5 g) ground cinnamon
  • Pinch of ground nutmeg (about 0.1 g)
  • Pinch of ground ginger (about 0.1 g, optional)
  • Ice cubes (as needed)
  • Optional topping: sprinkle of cinnamon or pumpkin pie spice

Instructions

  1. Brew your espresso or strong coffee: Use about 1 shot (30 ml) of freshly brewed espresso or ½ cup (120 ml) of strong coffee. Set it aside to stay warm.
  2. Mix the pumpkin base: In a small bowl or jar, combine 2 tablespoons (30 g) of pumpkin puree, 1 tablespoon (15 ml) of maple syrup, ½ teaspoon (2.5 ml) vanilla extract, ¼ teaspoon (0.5 g) ground cinnamon, a pinch each of nutmeg and ginger. Stir until smooth and fragrant.
  3. Prepare the oat milk cold foam: Pour 1 cup (240 ml) of cold oat milk into your frother. Froth until you get a thick, creamy foam with tiny bubbles—about 30-45 seconds. If using a French press, pump vigorously for 1-2 minutes until foamy.
  4. Combine latte: Fill a tall glass with ice cubes to your liking. Pour the warm espresso or coffee over the ice. Slowly add the pumpkin mixture, stirring gently to combine with the coffee.
  5. Top with cold foam: Spoon or pour the oat milk cold foam on top of your latte. The thick foam should float beautifully above the pumpkin coffee layer.
  6. Garnish and serve: Sprinkle a dash of cinnamon or pumpkin pie spice on top. Serve immediately and enjoy.

Notes

Use cold, fresh barista blend oat milk for best frothing results. Stir pumpkin puree well with syrup and spices to avoid clumps. Prepare pumpkin mix and brew coffee first, then froth oat milk last to keep foam stable. Maple syrup sweetness can be adjusted to taste. For frothing without a frother, use a French press or shake cold oat milk in a sealed jar.
