  • 1/2 cup finely grated Parmesan cheese

  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a baking sheet and spray it lightly with olive oil spray.
  2. Pat the pork chops dry with paper towels. Place each chop between two sheets of plastic wrap and gently pound to an even 1/2-inch thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, and a pinch of garlic powder. Let them sit for 5 minutes.
  3. Set up your dredging station: In the first shallow bowl, add 1/4 cup all-purpose flour (optional). In the second bowl, beat the 2 eggs with 1 tablespoon of water until frothy. In the third bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, Italian seasoning, and a pinch of salt and pepper. Mix well.
  4. Working one at a time, dredge each chop in the flour (if using), shaking off excess. Dip into the beaten eggs, letting excess drip off. Press firmly into the breadcrumb mixture, coating the entire surface. Place the coated chop on the prepared wire rack.
  5. Once all chops are on the rack, spray the tops generously with olive oil spray.
  6. Bake for 18-22 minutes. At the 15-minute mark, check the internal temperature with an instant-read thermometer. You’re looking for 145°F (63°C). The crust should be deep golden brown and crispy.
  7. Remove from the oven and let the pork chops rest on the rack for 5 minutes before serving.
