Crispy Honey Garlic Chicken Thighs

A quick and easy 25-minute dinner recipe featuring bone-in, skin-on chicken thighs cooked to crispy perfection with a sticky, sweet honey garlic glaze.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 4 cloves garlic, minced
  • 1/4 cup honey (85 g)
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon apple cider vinegar
  • 1/4 cup water (60 ml)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin (about 5 minutes).
  2. Season both sides of the chicken thighs generously with salt and black pepper.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until hot but not smoking, about 2 minutes.
  4. Place the chicken thighs skin-side down in the skillet. Press lightly to ensure even contact and cook without moving for 7-8 minutes until the skin is golden and crispy. If the skin sticks, cook an additional minute until it releases easily.
  5. Flip the chicken thighs and cook the other side for 5 minutes until cooked through (internal temperature of 165°F / 74°C). Remove chicken from the pan and set aside.
  6. Lower heat to medium. Add minced garlic to the same pan and sauté for 30 seconds until fragrant, being careful not to burn it.
  7. Add honey, soy sauce, apple cider vinegar, water, and red pepper flakes to the pan. Stir and let the sauce simmer gently, stirring occasionally, until it thickens slightly, about 2-3 minutes.
  8. Return the chicken thighs to the pan, spoon the sauce over each piece, and cook for another 1-2 minutes to coat and reheat the chicken.
  9. Serve immediately with a drizzle of the sticky honey garlic sauce.

Notes

Pat chicken dry before cooking to ensure crispiness. Do not overcrowd the pan to avoid steaming. Adjust heat to medium-high to prevent burning the sauce. Use a meat thermometer to check for doneness. Sauce thickness can be adjusted by simmering longer or adding water. For gluten-free, substitute soy sauce with tamari or coconut aminos.
