A quick and easy 25-minute dinner recipe featuring crispy skin-on chicken thighs glazed with a sweet and savory honey garlic sauce. Perfect for busy weeknights and meal prep.

  • 4 bone-in, skin-on chicken thighs (around 1.5 lbs / 700 g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 cup water (60 ml)
  • Pinch of crushed red pepper flakes (optional)
  • Thinly sliced green onions or scallions, for garnish
  • Toasted sesame seeds (optional, for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture. Season both sides generously with salt and pepper. (5 minutes)
  2. Place a 10-inch heavy skillet or cast iron pan over medium-high heat and add 2 tablespoons of oil. Heat until shimmering but not smoking. (2 minutes)
  3. Place the chicken thighs skin-side down in the pan. Press down gently with tongs to ensure even contact. Cook without moving for 6-8 minutes until the skin is golden and crisp. (6-8 minutes)
  4. Flip the chicken thighs and cook the other side for 5 minutes to finish cooking through. (5 minutes)
  5. While the chicken cooks, mix minced garlic, honey, soy sauce, vinegar, water, and crushed red pepper flakes in a small bowl.
  6. Pour the sauce mixture around the chicken (not directly on top to keep the skin crisp). Reduce heat to medium-low and simmer for 5 minutes, spooning the sauce over the chicken occasionally as it thickens. (5 minutes)
  7. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). The sauce should be thick and sticky.
  8. Remove chicken to a plate, drizzle with extra sauce from the pan, and sprinkle with sliced scallions and toasted sesame seeds. (2 minutes)

Notes

Pat chicken skin dry before cooking to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Spoon sauce around chicken to keep skin crispy. If sauce thickens too quickly or burns, add a splash of water and lower heat. Let chicken rest after cooking to lock in juices. For an oven finish, after searing, transfer skillet to a 400°F oven for 10 minutes.
