  • 1 (14.5-ounce) can diced tomatoes with green chilies (e.g., Rotel)
  • 1 (1-ounce) packet taco seasoning (e.g., Old El Paso)
  • 2 cups beef broth (optional, for soupier consistency)

Instructions

  1. Brown the ground beef (optional but recommended): In a skillet over medium-high heat, cook the ground beef until no longer pink, about 6-8 minutes. Drain excess fat.
  2. Layer ingredients in the crockpot: Add the cooked ground beef, drained black beans, drained corn, diced tomatoes with green chilies, and taco seasoning. Stir gently to combine.
  3. Add broth (if using): Pour in 2 cups of beef broth for a soupier consistency. For a thicker, chili-like texture, skip the broth.
  4. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  5. Taste and adjust: About 30 minutes before serving, taste the soup. Add more taco seasoning or a pinch of salt if needed.
  6. Serve with toppings: Ladle into bowls and let everyone customize their own with shredded cheese, sour cream, crushed tortilla chips, fresh cilantro, etc.

Notes

For best flavor, brown the ground beef first. The soup thickens overnight; add broth when reheating. For a vegetarian version, swap ground beef for two cans of black beans and use vegetable broth. For a spicier version, use hot Rotel and add diced jalapeño.
