  • 2 tablespoons taco seasoning
  • 1 can (15 oz or 425 g) black beans, drained and rinsed
  • 2 cups (about 300 g) cooked rice (white, brown, or cauliflower)
  • 1 cup (240 ml) salsa (mild, medium, or hot)

Instructions

  1. Cook the ground turkey: Heat a large skillet over medium-high heat. Add 1 lb (450 g) of ground turkey. Break it apart with a wooden spoon and cook until browned and no longer pink, about 5-7 minutes. If using extra-lean turkey, add a tablespoon of olive oil to the pan first. Drain any excess fat if needed.
  2. Add taco seasoning: Sprinkle 2 tablespoons of taco seasoning over the cooked turkey. Stir well to coat every piece. Cook for 1 minute, stirring constantly, until the seasoning is fragrant. If the pan looks dry, add a splash of water (about 2 tablespoons) to help the seasoning distribute.
  3. Stir in black beans and salsa: Add 1 can (15 oz or 425 g) of drained and rinsed black beans and 1 cup (240 ml) of salsa. Stir everything together. Let it simmer for 3-4 minutes, stirring occasionally, until the beans are heated through and the mixture thickens slightly. Taste and adjust seasoning—add a pinch of salt or a dash of hot sauce if desired.
  4. Fold in the rice: Add 2 cups (about 300 g) of cooked rice to the skillet. Gently fold it into the turkey-bean mixture until everything is evenly combined. Cook for 2 minutes, just until the rice is heated through. If the mixture seems dry, add a little more salsa or a splash of water.
  5. Portion into meal prep containers: Divide the mixture evenly among 4-6 meal prep containers. Let them cool completely before sealing the lids. Store in the refrigerator for up to 5 days, or freeze for up to 3 months.

Notes

For best texture, use day-old rice to prevent mushiness. Rinse black beans to remove excess sodium. Toast the taco seasoning for deeper flavor. Store salsa separately if meal prepping to keep bowls from getting too wet. The flavors improve after a day or two in the fridge.
