  • 1 tablespoon cream cheese, softened (optional, for extra stability)
  • 1 cup (240 ml) strongly brewed coffee or 2 shots espresso, chilled (for serving)

Instructions

  1. Brew your coffee base: Brew 1 cup (240 ml) of strong coffee or pull 2 shots of espresso. Let it cool to room temperature. For an iced version, pour the coffee over a glass filled with ice and set aside.
  2. Combine the foam ingredients: In a small bowl or jar, add 1/2 cup (120 ml) whole milk, 2 tablespoons (30 ml) heavy cream, 2 tablespoons (30 g) pumpkin purée, 1 tablespoon (12 g) brown sugar, 1/2 teaspoon vanilla extract, 1/4 teaspoon pumpkin pie spice, and a tiny pinch of salt. If using cream cheese, add 1 tablespoon of softened cream cheese as well.
  3. Mix until smooth: Use a small whisk or fork to stir everything together until the pumpkin purée and cream cheese (if using) are fully incorporated, about 30 seconds. Ensure there are no lumps.
  4. Froth the mixture: Insert your milk frother into the mixture, keeping it just below the surface. Turn it on and froth for 30 to 45 seconds, moving the frother in a gentle circular motion. Stop when it reaches a consistency similar to melted ice cream—pourable but not runny.
