Easy Cranberry Brie Bites: The Best Light Thanksgiving Appetizer

These light and easy Cranberry Brie Bites are the perfect Thanksgiving appetizer, combining flaky puff pastry, creamy brie, and tart cranberries with a touch of orange zest and rosemary. Ready in under 30 minutes, they’re a crowd-pleasing, stress-free addition to any holiday spread.

  • 1 sheet frozen puff pastry, thawed
  • 4 oz brie cheese, cold and cut into 24 small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 tablespoon fresh orange zest
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large egg, beaten for egg wash
  • Flaky sea salt, for sprinkling
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. If using a mini muffin tin, lightly grease it with butter or non-stick spray.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Gently roll it out to a 12×12 inch square. Cut the pastry into 24 equal squares, about 2 inches each.
  3. Gently press each square into the cups of your mini muffin tin, letting the corners poke up slightly. If not using a tin, place squares on the parchment-lined baking sheet and fold edges up slightly to create a little wall.
  4. Place one cube of cold brie in the center of each pastry cup.
  5. Spoon about 1/2 teaspoon of cranberry sauce over each brie cube.
  6. Sprinkle a tiny pinch of fresh rosemary and a whisper of orange zest over each bite. If desired, drizzle a tiny bit of honey on top. Brush the edges of the pastry with the beaten egg wash.
  7. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the cheese is melted and bubbly.
  8. Let the bites cool in the tin for 5 minutes, then carefully transfer to a serving platter. Sprinkle with flaky sea salt right before serving.

Notes

Keep puff pastry and brie cold for best results. Don’t overfill the bites. Start checking at 12 minutes. Can be assembled up to 4 hours in advance and refrigerated. Freeze unbaked bites for up to 2 months. Reheat in oven at 350°F for 5-7 minutes.
