  • 1/2 cup (170g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 45 cloves garlic, minced
  • Optional: sliced green onions, sesame seeds, lime juice for garnish

Instructions

  1. In a small bowl, whisk together honey, soy sauce, and minced garlic until smooth.
  2. Place chicken thighs in a single layer in the bottom of a 4-6 quart crockpot.
  3. Pour the honey garlic mixture evenly over the chicken, coating each piece.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken reaches an internal temperature of 165°F (74°C) and shreds easily.
  5. Optional: Transfer chicken to a plate. Pour cooking liquid into a small saucepan and simmer over medium heat for 5-7 minutes until thickened, or whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and simmer for 2 minutes.
  6. Return chicken to the crockpot or a serving dish, pour thickened sauce over top, and toss gently to coat. Garnish with green onions and sesame seeds if desired. Serve hot over rice, noodles, or vegetables.

Notes

For extra flavor, brown the chicken thighs in a hot skillet with oil for 2-3 minutes per side before adding to the crockpot. Double the sauce if you love it saucy. Let the chicken rest in the sauce for 10-15 minutes before serving. Leftovers taste even better the next day.
