This easy crockpot meatloaf with brown sugar glaze is the kind of recipe that makes you wonder why you ever bothered with the oven. It’s forgiving, delicious, and practically cooks itself, with a caramelized glaze that pairs perfectly with the tender, juicy meatloaf.

  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs, room temperature
  • 1/2 cup milk (whole milk preferred)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon dried parsley
  • 1/2 cup ketchup
  • 1/3 cup brown sugar, packed (light or dark)
  • 1 tablespoon yellow mustard (or Dijon)
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Line the bottom of a 6-quart or larger crockpot with a long strip of parchment paper, leaving about 4 inches of overhang on each side. Lightly spray the parchment with non-stick cooking spray.
  2. In a small bowl, whisk together the ketchup, packed brown sugar, mustard, and 1 teaspoon Worcestershire sauce. Set aside.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, diced onion, minced garlic, 2 tablespoons Worcestershire sauce, salt, pepper, and dried parsley. Use your hands to gently mix until just combined, about 30 seconds. Do not overmix.
  4. Transfer the meat mixture to the prepared crockpot and shape it into a loaf shape, leaving a little space around the edges.
  5. Pour about half of the brown sugar glaze over the top of the meatloaf and spread evenly. Reserve the remaining glaze.
  6. Cover the crockpot and cook on LOW for 4 to 5 hours. Do not cook on high.
  7. After 4 hours, check the internal temperature with an instant-read thermometer. It should read at least 160°F (71°C) in the center. If not, cook for another 30 minutes and check again.
  8. Once fully cooked, spoon the reserved glaze over the top. Let it sit in the crockpot with the lid off for about 10 minutes.
  9. Use the parchment paper handles to carefully lift the meatloaf out of the crockpot and transfer to a cutting board. Let it rest for 5 minutes before slicing.
  10. Slice into even pieces with a sharp knife. Spoon any extra glaze from the bottom of the crockpot over the slices before serving.

Notes

Don’t skip the parchment paper—it makes lifting the meatloaf out much easier. If you see a lot of liquid pooling around the meatloaf after 3 hours, you can carefully spoon some out to prevent a soggy bottom. Let the meatloaf rest for 5 minutes before slicing to keep it from falling apart. Double the glaze if you want extra for serving.
