Easy Ground Beef and Broccoli Skillet Recipe

A quick and delicious one-skillet meal with ground beef and broccoli in a savory sauce, perfect for busy weeknights.

  • 1 pound (450g) ground beef (80/20 recommended)
  • 3 cups broccoli florets (about 1 large head)
  • ¼ cup (60ml) low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for cornstarch slurry)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or chili flakes (optional)
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds (optional)
  • 2 tablespoons neutral oil (avocado or canola)

Instructions

  1. Prep your ingredients first: mince garlic, grate ginger, slice green onions, cut broccoli into small florets. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and sriracha. In another small bowl, mix cornstarch with 2 tablespoons cold water until smooth.
  2. Heat your skillet over high heat. Add 1 tablespoon neutral oil and let it get shimmering hot. Add ground beef and cook undisturbed for 2-3 minutes for a brown crust. Break it up and cook another 3-4 minutes until fully browned. Transfer beef to a plate, leaving rendered fat in the pan.
  3. Add remaining 1 tablespoon oil to the skillet. Add broccoli florets and cook undisturbed for 2 minutes to char. Stir-fry for another 2-3 minutes until bright green and tender-crisp. If needed, add 2 tablespoons water and cover for 1 minute to steam.
  4. Push broccoli to the sides of the pan. Add minced garlic and grated ginger to the center. Cook for about 30 seconds, stirring constantly, until fragrant.
  5. Return beef to the pan. Toss to combine. Pour soy sauce mixture over everything and stir. Let simmer for 1-2 minutes.
  6. Stir cornstarch slurry and pour into skillet. Stir constantly for 30-60 seconds until sauce thickens and becomes glossy. If too thick, add a splash of water.
  7. Remove from heat. Sprinkle with sliced green onions and sesame seeds. Serve immediately over steamed rice, cauliflower rice, or noodles.

Notes

Don’t overcrowd the pan to ensure proper browning. Get the pan screaming hot for a good sear. Let the beef rest after browning to keep it tender. Taste as you go to adjust saltiness. For best results, prep all ingredients before starting to cook.
