  • 1 ½ cups (355ml) warm water (about 110°F)
  • 2 ¼ teaspoons (one packet) active dry yeast
  • 1 tablespoon (12g) granulated sugar
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 teaspoon (6g) salt
  • ½ cup (120g) baking soda
  • Coarse sea salt, for sprinkling
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • 8 ounces (226g) sharp cheddar cheese, shredded
  • ¾ cup (177ml) beer (IPA or pale ale recommended)
  • 4 ounces (113g) cream cheese, softened
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In your mixing bowl, combine the warm water, sugar, and active dry yeast. Give it a gentle stir and let it sit for 5-10 minutes until it’s foamy and smells like bread. If it doesn’t foam, your yeast might be dead—start over with fresh yeast.
  2. Make the dough: Add the melted butter, salt, and 2 cups of flour to the yeast mixture. Mix on low speed with the dough hook until combined. Gradually add the remaining flour, ½ cup at a time, until a soft dough forms. It should pull away from the sides of the bowl but still feel slightly tacky to the touch. You might not need all the flour, and that’s okay.
  3. Knead the dough: Knead on medium speed for about 5-7 minutes, or by hand on a lightly floured surface for 8-10 minutes. The dough should be smooth and elastic. When you poke it, it should spring back slowly.
  4. First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm spot for about 45 minutes to 1 hour. It should double in size. I usually put it in my oven with the light on—it’s the perfect cozy environment.
  5. Preheat and prep: About 15 minutes before the dough is ready, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Fill your large pot with about 8 cups of water and bring it to a boil. Carefully add the baking soda—it will foam up, so don’t be alarmed. Stir until dissolved, then reduce the heat to a simmer.
  6. Shape the bites: Punch down the risen dough to release the air. Turn it out onto a lightly floured surface. Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 12-15 inches long. Using a sharp knife or bench scraper, cut the rope into 1-inch pieces. You’ll get about 20-24 bites per rope.
  7. Boil the bites: Working in batches of 8-10, drop the pretzel bites into the simmering baking soda water. Let them boil for 30 seconds, then flip them with a slotted spoon and boil for another 30 seconds. They’ll puff up slightly. Remove them with the slotted spoon, letting excess water drip off, and place them on the prepared baking sheet, spaced about an inch apart.
  8. Egg wash and salt: In a small bowl, whisk the egg with 1 tablespoon of water. Brush each pretzel bite with the egg wash—this gives them that beautiful golden-brown shine. Sprinkle generously with coarse sea salt.
  9. Bake: Bake for 12-15 minutes, until the pretzel bites are deep golden brown and puffed. Rotate the baking sheet halfway through for even browning.
  10. Make the beer cheese dip: While the pretzels bake, make the dip. In a small saucepan over medium heat, combine the beer and cream cheese. Whisk until the cream cheese is melted and smooth. Gradually add the shredded cheddar cheese, a handful at a time, whisking constantly until fully melted and smooth. Stir in the Dijon mustard, garlic powder, Worcestershire sauce, and a pinch of salt and pepper. Keep warm over low heat, stirring occasionally.
  11. Serve: Let the pretzel bites cool for 2-3 minutes on the baking sheet. Transfer to a serving platter with the warm beer cheese dip on the side. Serve immediately—they’re best warm!
