Easy Kielbasa and White Bean Soup: A 30-Minute One-Pot Meal

A quick and comforting soup made with smoky kielbasa, creamy white beans, and savory broth, ready in just 30 minutes with one pot.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 12–14 ounces kielbasa sausage, sliced into half-moons
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for serving)
  • Grated Parmesan cheese (for serving)
  • Crusty bread or dinner rolls (for serving)

Instructions

  1. Prep your ingredients first. Dice the onion, carrots, and celery into roughly equal-sized pieces—about 1/4 inch. Mince the garlic. Slice the kielbasa into half-moons, about 1/4 inch thick. Drain and rinse the white beans.
  2. Heat the olive oil in your pot over medium-high heat. Let it warm up for about 30 seconds until shimmering but not smoking. Add the sliced kielbasa in a single layer. Cook undisturbed for 2-3 minutes until deeply browned, then stir and cook for another 2 minutes until the other side is browned. Use a slotted spoon to transfer to a plate. Leave the drippings in the pot.
  3. Add the diced onion, carrots, and celery to the pot. If the pot looks dry, add another tablespoon of olive oil. Cook over medium heat, stirring occasionally, for 5-6 minutes until softened and the onion is translucent.
  4. Add the minced garlic, dried thyme, dried rosemary, and smoked paprika. Stir constantly for about 30 seconds until fragrant. Be careful not to let it burn.
  5. Pour in about 1/2 cup of the chicken broth and use a wooden spoon to scrape up all the browned bits from the bottom of the pot (deglazing).
  6. Add the remaining 3 1/2 cups of chicken broth, the bay leaf, and the browned kielbasa back into the pot. Stir together. Bring to a boil over high heat, then reduce heat to low and let it simmer, covered, for 10 minutes.
  7. Add the drained and rinsed white beans. Stir gently. Let the soup simmer for another 5 minutes, uncovered, to thicken slightly.
  8. Remove the bay leaf and discard. Taste and season with salt and pepper. Start with 1/4 teaspoon salt and adjust as needed.
  9. Ladle the soup into bowls. Garnish with fresh parsley and a sprinkle of Parmesan cheese if desired. Serve with crusty bread for dunking.

Notes

Brown the kielbasa properly for deep flavor. Watch your salt—kielbasa and canned beans are already salty. Let the soup rest for 10 minutes after cooking for better flavor. This soup is even better the next day. For a vegetarian version, use plant-based sausage and vegetable broth.
