These Easy Mini Chicken Caesar Wraps are a faithful recreation of a beloved lost lunch, scaled down and designed to be made ahead for busy weeks. They come together in about twenty minutes and actually get better after a few hours in the fridge.

  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/3 cup shredded Parmesan cheese
  • 1/2 cup croutons, slightly crushed
  • 810 mini flour tortillas (or 45 regular size cut in half)
  • Optional: lemon juice, black pepper, anchovy paste

Instructions

  1. Prep the chicken: If using leftover or rotisserie chicken, shred or dice it into bite-sized pieces. Place in a large mixing bowl.
  2. Chop the romaine: Wash and dry the lettuce thoroughly, then chop into thin strips, about 1/2 inch wide. Add to the bowl with the chicken.
  3. Crush the croutons: Put the croutons in a zip-top bag and crush them gently with your hands or a rolling pin. Add to the bowl.
  4. Add the dressing and cheese: Pour the Caesar dressing over the chicken and lettuce mixture. Add the shredded Parmesan. Toss everything together until evenly coated. The mixture should be moist but not dripping.
  5. Season and adjust: Taste the filling and add black pepper if needed. Squeeze a little lemon juice in if you want it brighter.
  6. Warm the tortillas: Heat a dry skillet over medium heat. Warm each tortilla for about 20-30 seconds per side, until they are pliable and lightly toasted. Stack them on a plate and cover with a clean kitchen towel to keep them warm.
  7. Assemble the wraps: Lay a warm tortilla on a clean work surface. Spoon about 1/4 cup of the filling into the center, spreading it in a line. Fold the sides in, then roll tightly from the bottom, tucking as you go.
  8. Wrap and chill: Tightly wrap each finished wrap in plastic wrap or a beeswax wrap. Place in the refrigerator for at least 30 minutes before serving, or up to 4 days.

Notes

Dry lettuce is crucial to prevent sogginess. Do not overfill the tortillas—about 1/4 cup of filling per mini tortilla is ideal. Toasting the tortillas creates a barrier that prevents the dressing from soaking through. Let the wraps rest in the fridge for at least 30 minutes to set. For best results, use fresh chicken and do not skip the croutons.
