Instructions

  1. Prepare the Crust (10 minutes): Crush the graham crackers until fine crumbs form using a food processor or a zip-top bag and rolling pin. In a bowl, mix crumbs with sugar and melted butter until the mixture holds together when pressed. Divide evenly into mini cheesecake cups (about 2 tablespoons per cup). Press firmly into the bottom to form a crust layer. Chill in the fridge while making the filling.
  2. Make the Cheesecake Filling (15 minutes): Beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture using a spatula, being careful not to deflate it. The filling should be light, fluffy, and lump-free.
  3. Assemble the Cheesecakes (10 minutes): Spoon or pipe the cheesecake filling evenly over the chilled crusts, filling each cup almost to the top. Smooth the surface with a spatula or spoon. Cover with plastic wrap and refrigerate for at least 2 hours to set.
  4. Add Patriotic Toppings (5 minutes): Just before serving, garnish each mini cheesecake with sliced strawberries and a few blueberries. Add a small dollop of whipped cream if desired.
