  • 34 ripe peaches, sliced thin
  • 2 tbsp honey or maple syrup (optional)
  • 1 tbsp lemon juice

Instructions

  1. Prepare the peaches: In a bowl, toss the sliced peaches with lemon juice and honey (if using). Set aside for about 10 minutes to macerate.
  2. Make the cream cheese filling: Beat the softened cream cheese in a large bowl with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  3. Whip the cream: In a separate chilled bowl, whip the cold heavy cream with powdered sugar and vanilla extract until stiff peaks form, about 4-5 minutes.
  4. Fold the whipped cream into cream cheese: Gently fold about one-third of the whipped cream into the cream cheese to lighten it, then fold in the remaining whipped cream until just combined.
  5. Assemble the cake: Spread a thin layer of the cream cheese mixture on the bottom of a 9×9 inch baking dish. Arrange a layer of graham crackers over the cream. Spread another layer of cream over the crackers, then add a layer of peach slices. Repeat layering until ingredients are used, finishing with a cream layer on top.
  6. Chill the cake: Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  7. Serve: Garnish with extra peach slices or crushed graham crackers before slicing and serving.
