  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup mixed vegetables (e.g., julienned carrots, halved snow peas or sugar snap peas, corn kernels, sliced green onions)

Instructions

  1. Prepare the broth concentrate: In a small bowl or liquid measuring cup, combine the low-sodium soy sauce, miso paste, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until the miso is fully dissolved and the mixture is smooth. Set aside.
  2. Layer the jars (bottom layer – flavor base & protein): Divide the broth concentrate evenly between two wide-mouth mason jars. Spoon it into the bottom. Next, divide the shredded or diced cooked chicken between the jars, placing it directly on top of the concentrate.
  3. Layer the jars (middle layer – the veggies): Add your chosen vegetables. Start with heartier veggies like julienned carrots and snow peas, then add softer ones like corn and green onions. Pack them down gently but firmly to create a solid ‘lid’ of veggies.
  4. Layer the jars (top layer – the dry noodles): Break the instant ramen noodle blocks in half (or into smaller pieces). Place the dry, uncooked noodles on top of the vegetable layer. Do not press them down; they should sit loosely on top.
  5. Seal and store: Screw the lids on tightly. Store the jars in the refrigerator for up to 4 days.
  6. When you’re ready to eat: Remove a jar from the fridge. Remove the lid. Pour boiling water into the jar, filling it until the noodles are just covered.
  7. Steep and stir: Put the lid back on loosely (just resting on top) to trap the heat. Let it sit for 3 to 4 minutes. After 3 minutes, give it a good stir with a fork or chopsticks to mix the broth concentrate from the bottom with the hot water and noodles.
  8. Add toppings and enjoy: If using a soft-boiled egg, seaweed, or sesame seeds, add them now. Stir gently one more time. Eat directly from the jar.
