Easy Pumpkin Cold Foam Coffee (Best Copycat Recipe)

This quick and easy pumpkin cold foam coffee is a perfect copycat of the Starbucks version, made with simple ingredients in under 5 minutes. It features a silky, spiced pumpkin foam over cold brew coffee for a delicious fall treat.

  • 1/2 cup (120 ml) cold heavy cream
  • 2 tablespoons (30 g) pumpkin puree
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 teaspoon (1 g) pumpkin pie spice
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • Pinch of salt
  • 1 cup (240 ml) cold brew coffee
  • Ice cubes as needed
  • 23 tablespoons (3045 ml) milk of choice (optional)

Instructions

  1. Fill a tall glass with ice cubes and pour 1 cup of cold brew coffee over the ice. If using milk, stir in 2-3 tablespoons now. Set aside.
  2. In a blender, combine cold heavy cream, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt.
  3. Blend on low for 10 seconds, then increase to medium-high and blend for 20-30 seconds until thick and fluffy, like a milkshake or soft-serve ice cream.
  4. Check consistency: if too thin, blend another 10-15 seconds; if too thick, add 1 teaspoon cold cream and pulse.
  5. Gently spoon or pour the foam over the back of a spoon onto the cold brew to create a layered effect.
  6. Optionally garnish with a pinch of pumpkin pie spice or cinnamon.
  7. Serve immediately.

Notes

Use very cold heavy cream (at least 36% milk fat) for best foam. If pumpkin puree is watery, pat dry with a paper towel before blending. Foam is best used immediately; it will deflate within 10-15 minutes. For dairy-free, substitute with full-fat canned coconut cream (chilled overnight).
