Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon Dijon mustard (optional)
  • 1 pound baby potatoes, halved (optional)
  • 2 cups broccoli florets (optional)
  • 1 tablespoon olive oil (for vegetables)
  • 1/2 teaspoon salt (for vegetables)
  • 1/4 teaspoon black pepper (for vegetables)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
  2. Pat the pork chops dry with paper towels. Season both sides with salt, pepper, and garlic powder. Set aside.
  3. In a small bowl, whisk together the honey, minced garlic, soy sauce, apple cider vinegar, melted butter, and Dijon mustard (if using) until smooth.
  4. If adding vegetables, toss them in a separate bowl with olive oil, salt, and pepper. Spread them on one side of the prepared sheet pan. Place the seasoned pork chops on the other side, leaving space between each chop.
  5. Brush or spoon half of the glaze over the tops of the pork chops. Reserve the remaining glaze for later.
  6. Bake for 15 minutes. Remove the pan from the oven and brush the remaining glaze over the pork chops. Stir the vegetables if using.
  7. Return to the oven and bake for another 5-10 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C). The glaze should be sticky and caramelized.
  8. Let the pork chops rest for 5 minutes before serving.

Notes

Pat the pork chops dry to ensure the glaze sticks. Apply glaze in two stages for best caramelization. Let pork chops rest for 5 minutes before serving to keep them juicy. Line the pan with parchment paper for easy cleanup. For thinner pork chops, reduce cooking time by about 5 minutes.
