Instructions

  1. Warm the spices: Place a small dry saucepan over medium heat. Add the freshly grated nutmeg, ground cinnamon, and ground cloves. Toast for 30-45 seconds, stirring constantly, until fragrant.
  2. Heat the milk: Pour the whole milk into the saucepan with the toasted spices. Whisk to combine. Heat over medium heat until warm but not boiling, about 3 minutes.
  3. Whisk the eggs and sugar: In a medium mixing bowl, whisk the eggs and sugar until pale yellow and slightly thickened, about 1-2 minutes.
  4. Temper the eggs: Slowly pour about 1/2 cup of the warm spiced milk into the egg mixture while whisking constantly. Then pour the egg mixture back into the saucepan with the remaining milk, whisking all the while.
  5. Heat gently: Return the saucepan to low heat. Cook for about 1 minute, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. Do not let it boil.
  6. Strain and chill (optional): Pour the mixture through a fine-mesh strainer into a pitcher or bowl to catch any bits of cooked egg or spice clumps.
  7. Add bourbon and vanilla: Stir in the bourbon and vanilla extract. Taste and adjust sweetness or spice level.
  8. Chill or serve immediately: Serve warm right away, or refrigerate for at least 2 hours to serve cold.
