These no-cook roll-ups are a fun, kid-friendly lunchbox hack made with flattened bread, deli turkey, cheese, and cream cheese. They look like sushi but come together in under 10 minutes.

  • 4 slices of soft white bread (or whole wheat)
  • 4 slices of deli turkey breast
  • 4 slices of cheddar cheese (or your favorite)
  • 2 tablespoons cream cheese, softened
  • Optional: 1 tablespoon mayonnaise or Dijon mustard
  • Optional: 1/4 cup shredded lettuce or spinach
  • Optional: 1/4 cup thinly sliced cucumber or bell pepper
  • Optional: 1 tablespoon everything bagel seasoning

Instructions

  1. Flatten the bread. Take one slice of bread and place it on your cutting board. Use a rolling pin to gently roll over it, pressing down evenly until the bread is about 1/4-inch thick. Work from the center outward. If the bread cracks, it’s too dry—try a fresher slice or lightly dampen it with a spray bottle. Repeat with all four slices.
  2. Trim the crusts (optional but recommended). Using a sharp knife, cut off the crusts from each flattened slice. This makes the roll-ups more tender and easier to roll. Save the crusts for breadcrumbs or toast them for a snack!
  3. Spread the binder. Using a butter knife or small spatula, spread about 1/2 tablespoon of softened cream cheese evenly over the entire surface of one bread slice. Go all the way to the edges—this helps seal the roll later. If using mustard or mayo, spread it on top of the cream cheese.
  4. Layer the fillings. Place one slice of turkey on top of the cream cheese, covering the bread completely. Tear or fold the turkey to fit if needed. Then, place one slice of cheese on top of the turkey. If you’re adding lettuce or veggies, arrange them in a single layer on the cheese.
  5. Roll it up tightly. Starting at one edge, carefully roll the bread away from you, keeping the filling snug inside. Use your fingertips to tuck the roll as you go, like you’re rolling a sleeping bag. The cream cheese should help it stick. Don’t roll too loose, or the slices will fall apart.
  6. Wrap and chill. Place the rolled-up bread seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends like a candy wrapper. This keeps the roll compact. Refrigerate for at least 15 minutes (30 is better). This step is crucial—it firms up the cream cheese and makes slicing clean.
  7. Slice into coins. Unwrap the chilled roll and place it on your cutting board. Using a sharp serrated knife, slice the roll into 1-inch thick rounds. Use a gentle sawing motion—don’t press straight down. You should get about 4-5 pieces per roll.
  8. Serve or pack. Arrange the roll-ups on a plate or pack them directly into a lunchbox. They’re best served cold or at room temperature. If packing for later, keep them refrigerated until you’re ready to go.

Don’t skip the chilling step—it firms up the cream cheese and makes slicing clean. Use a serrated knife to avoid squishing the roll. Flatten bread evenly to prevent lopsided rolls. If bread cracks, microwave for 10 seconds to soften. For best results, use day-old bread.
