  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) light brown sugar
  • 2 1/2 cups (315g) all-purpose flour
  • 1/2 teaspoon salt
  • 4 large eggs, room temperature
  • 1 1/2 cups (300g) granulated sugar
  • 1/4 cup (32g) all-purpose flour
  • 1/2 cup (120ml) freshly squeezed lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1 1/2 cups (225g) fresh blueberries
  • Red and blue fondant or colored marzipan
  • Optional: powdered sugar for dusting

Instructions

  1. Brown the Butter: In a medium saucepan over medium heat, melt the 1 cup (227g) of butter. Stir frequently as it foams and browns, about 5-7 minutes. Remove from heat immediately and transfer to a heatproof bowl to cool slightly.
  2. Prepare the Crust: Preheat oven to 350°F (175°C). In a large bowl, whisk together 2 1/2 cups (315g) flour, 1/2 teaspoon salt, 1/2 cup (100g) granulated sugar, and 1/4 cup (50g) light brown sugar. Pour in the warm brown butter and stir until coarse crumbs form. Press evenly into the bottom of a 9×13-inch baking pan. Bake 18-20 minutes until golden around edges. Let cool slightly.
  3. Make the Lemon Filling: In a clean bowl, whisk 4 large eggs and 1 1/2 cups (300g) granulated sugar until smooth. Add 1/4 cup (32g) flour, 1/2 cup (120ml) lemon juice, and 1 tablespoon lemon zest. Whisk to combine. Gently fold in fresh blueberries.
  4. Assemble & Bake: Pour lemon-blueberry filling over warm crust. Bake 25-30 minutes until filling is set but slightly jiggly in center. Toothpick should come out mostly clean with a few moist crumbs.
  5. Cool & Decorate: Cool bars completely in pan on wire rack, then refrigerate at least 2 hours to set. Roll out red and blue fondant, cut small stars, and place on top before serving. Dust with powdered sugar if desired.

Notes

Use a light-colored pan to brown butter and watch carefully to avoid burning. Fold blueberries gently to keep them intact. Rotate pan halfway through baking for even cooking. Chill bars well before cutting to maintain shape and ease decorating. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use vegan butter but flavor will differ.
