  • 4 tablespoons unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 2 tablespoons fresh herbs (parsley, cilantro, chives), finely chopped
  • 1 tablespoon fresh lime juice
  • ½ cup Cotija cheese, crumbled
  • 1 teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine softened butter, minced garlic, chopped fresh herbs, lime juice, smoked paprika (if using), salt, and black pepper. Mix thoroughly and let sit at room temperature.
  2. Preheat grill or grill pan to medium-high heat (around 375°F). Brush corn lightly with olive oil.
  3. Grill corn on the grates, turning every 2-3 minutes for 12-15 minutes until golden brown with grill marks and cooked through.
  4. Remove corn from grill and immediately brush generously with garlic herb butter.
  5. Sprinkle crumbled Cotija cheese evenly over the buttered corn.
  6. Optionally, add extra lime juice, herbs, or smoked paprika for additional flavor.

Notes

If no grill is available, use a cast iron grill pan or broil the corn in the oven, turning frequently to avoid burning. Butter can be prepared a day ahead and stored in the fridge. For dairy-free options, substitute butter with vegan margarine and Cotija cheese with a plant-based alternative.
