  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 23 fresh jalapeños, seeded and finely chopped
  • 1 tsp smoked paprika
  • 1/2 tsp chipotle powder (optional)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • Fresh cilantro or green onions, chopped (for garnish)
  • 1 tsp oil (for sautéing jalapeños)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a small skillet over medium heat with a teaspoon of oil. Add the chopped jalapeños and cook for 3-4 minutes until softened and slightly charred. Set aside to cool slightly.
  3. In a large mixing bowl, combine the softened cream cheese and sour cream using an electric mixer or whisk. Mix until smooth and creamy, about 2-3 minutes.
  4. Fold in the shredded cheddar, smoked paprika, chipotle powder (if using), garlic powder, onion powder, salt, and pepper. Mix gently to combine.
  5. Add the sautéed jalapeños to the bowl and stir thoroughly.
  6. Spoon the mixture into your baking dish and smooth the top with a spatula. Bake for 20-25 minutes until bubbly and golden on top.
  7. Remove from oven and sprinkle freshly chopped cilantro or green onions over the top before serving.

Notes

If the dip seems too thick, add a tablespoon of milk or more sour cream to loosen it before baking. Watch the oven carefully to avoid burning. Use room temperature cream cheese for smoother mixing. Sautéing jalapeños mellows their heat and adds smoky richness. Adjust spice level by removing seeds or using milder peppers.
