These Fresh Rainbow Pinwheel Sandwich Roll-Ups with Turkey and Cream Cheese are quick, colorful, and perfect for any casual occasion or quick bites. They combine creamy turkey, fresh veggies, and soft tortillas into a fun and satisfying snack.

Ingredients

  • Large flour tortillas (10-inch / 25 cm)
  • Cream cheese (8 oz / 225 g), softened
  • Turkey breast slices (8 oz / 225 g), thinly sliced
  • Red bell pepper, thinly sliced
  • Yellow bell pepper, thinly sliced
  • Cucumber, peeled and julienned
  • Shredded carrot (about ½ cup / 60 g)
  • Baby spinach leaves (about 1 cup / 30 g)
  • Fresh chives, finely chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • Lemon juice (1 tsp / 5 ml) (optional)

Instructions

  1. Prepare the cream cheese mixture: In a medium bowl, soften the cream cheese by stirring it with a spatula until smooth. Add the lemon juice, chopped chives (if using), and a pinch of salt and pepper. Mix until well combined. This step takes about 5 minutes.
  2. Slice the vegetables: Wash and thinly slice the red and yellow bell peppers into long strips. Peel and julienne the cucumber, shred the carrot finely, and rinse the baby spinach leaves. This should take around 10 minutes.
  3. Lay out the tortillas: Place each tortilla flat on a clean surface. Using a spatula or butter knife, spread an even layer of the cream cheese mixture over the entire surface, about ¼ inch (0.6 cm) thick.
  4. Layer the fillings: Place turkey slices evenly over the cream cheese, followed by the colorful veggie strips and spinach leaves. Aim for a balanced spread — not too crowded but enough to get every bite packed with flavor. This step takes about 5 minutes.
  5. Roll tightly: Starting from one edge, roll the tortilla firmly but gently into a tight log. Using plastic wrap, wrap the roll and chill it in the refrigerator for at least 15 minutes.
  6. Slice into pinwheels: Remove the roll from the fridge, unwrap, and using a sharp serrated knife or pizza cutter, slice into 1-inch (2.5 cm) thick rounds. Arrange on a serving plate with the colorful spiral facing up.
  7. Serve and enjoy: These pinwheels are best served fresh but can be made a few hours ahead and stored refrigerated. If preparing in advance, cover with plastic wrap to maintain moisture.

Notes

Let cream cheese sit at room temperature for 20-30 minutes before mixing for easier spreading. Slice veggies uniformly thin to avoid bulky roll-ups. Roll snugly but gently to prevent filling from spilling out. Chill roll-ups for at least 15 minutes before slicing to maintain shape. Can be made ahead and stored refrigerated up to 2 days. Avoid microwaving to prevent soggy tortillas.
